Ultimate Almond Butter Cookies

Yield: 5 dozen cookies 

Cookie Ingredients:

1/2 cup Butter, softened
1/2 cup Zinke Creamy Almond Butter
3/4 cup sugar
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup real semi-sweet chocolate chips
2 teaspoons shortening.


Heat oven to 400°F. Combine butter, almond butter, sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add chips and shortening. Beat until well mixed.

Shape rounded teaspoonfuls of dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Flatten balls to 1/4 inch thick with bottom of buttered glass dipped in sugar. Bake for 6 to 8 minutes or until edges are lightly browned. Cool completely.

Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring occasionally, until smooth (2 to 4 minutes). Drizzle or pipe chocolate onto cookies making tree design, if desired.

Press chopped or diced Zinke almonds into cookies before baking.
